<h3 id="about-peranakan-and-nyonya" class="has-text-align-center wp-block-heading">About Peranakan and Nyonya</h3>



<p>The word Peranakan translates roughly to ‘locally born and bred’, with the popular idea being that Chinese immigrants married local Malaysians; resulting in a unique culture with entirely new traditional beliefs, clothes and cuisine. The men are called “Baba” and women are referred to as “Nyonya,” respectful and endearing terms for men and women respectively in the Indonesian language. As the women were primarily responsible for providing meals for the family, Peranakan cuisine is also referred to as ‘Nyonya’.</p>



<p>In this way, Peranakan and Nyonya food is a unique blend of Chinese, Malay and other Southeast Asian cultures. It originates from Chinese immigrants, who in the 15th century moved to the regions that are now Malaysia and Singapore and Indonesia, blending influences and cooking traditions and creating&nbsp;an exhilarating combination of all things tangy, spicy, herbal and aromatic!</p>

<p>プラナカン・ニョニャとは？</p>



<p>プラナカン(Peranakan)とはマレー語で「ここで生まれた」を意味し、英語では&#8221;Born here&#8221;と訳されます。19世紀末頃までに各国からマレーシアに移住してきた男性（中華系移民、インド系移民が多く古くはポルトガル人の子孫もいます）が、現地のマレー人女性と結婚し、生まれてきた混血の子孫を総称して「プラナカン」と呼びます。プラナカンの男の子をババ、女の子をニョニャと呼んでいます！プラナカン料理はよく女性が作っていますので、「ニョニャ料理」と呼ばれています！</p>

<h3 id="a-taste-of-nyonya-cuisine" class="has-text-align-center wp-block-heading">A Taste of Nyonya Cuisine</h3>



<p>Shall we try some Nyonya Cuisine together? Recently, my family and I went to PeraMakan, a Nonya restaurant in Singapore! The name of “PeraMakan” is a clever combination between “Peranakan” and “Makan” (which means “to eat” in Malay).</p>

<p>皆様、一緒にニョニャ料理を食べてみませんか？先日、家族と一緒にシンガポールの「ParaMakan」というニョニャ料理レストランに行ってきました！</p>



<p>このレストランの名前は、「Peranakan」と「Makan」（マカン：マレー語で食べることを意味する）の組み合わせです！</p>

<p>見た目は、中華料理なのですが食べてみるとスパイシーでエスニックな感じがします。激辛ともいえる香辛料を多用した味付けが特徴といえるでしょう。</p>

<p>Perhaps the quintessential Peranakan dish, the ayam buah keluak is unique for its use of the seeds of the kepayang (a tall tree native to the mangrove swamps of Malaysia and Indonesia). The seed itself is actually poisonous! If uncooked, it contains hydrogen cyanide so a tremendous deal of prep is required before it can be eaten: the seeds have to be boiled several times and then buried (usually in ash, banana leaves, and earth for more than a month so that the fermentation process makes the cyanide easy to be cleaned). The chicken and kepayang seeds are then simmered for hours in a paste of tamarind and&nbsp;<a aria-label=" (opens in a new tab)" rel="noreferrer noopener external" href="https://guide.michelin.sg/en/what-is-rempah" target="_blank" class="rank-math-link" data-wpel-link="external">rempah</a>.<br><br>The result is a complex and piquant dish bursting with spice, savory&nbsp;<em>umami&nbsp;</em>flavors, and a tang of bitterness.</p>

<p>一番目は、ニョニャ料理を代表する一品Ayam Buah Keluak（アヤム・ブア・クルア）です！料理名の「Ayam」は鶏肉、「Buah」は混ぜる、「Keluak」はパンギの木(熱帯地方に生えるイイギリ科の高木)の実を表すマレー・インドネシア語です。</p>



<p>このパンギの木は種子を食材とし、実の形はカスタネットに似て栗の渋皮を硬くした様な殻に包まれています。この「Keluak」自体は有毒なので、水に晒すなどの加工が必要ですが、それでも料理に使いたいほど肉類との相性がよく、ネギのようなねっとりとした香ばしい香り溢れる薬味食材です。旨味たっぷりです！</p>



<p>日本でこの「Keluak」を手に入れることが出来るかどうかわかりません。なので、この料理を日本の家庭で完全に再現するのは難しいかと思います。</p>

<p>Otak-otak means “brains” in Indonesian. Although it may look like a mixture of brains, it is actually a grilled&nbsp;fish cake&nbsp;made of ground&nbsp;fish meat&nbsp;mixed with tapioca starch and spices. Otak-otak is very popular across Southeast Asia, especially across Indonesia, Malaysia, and Singapore. It is often served wrapped and grilled inside a banana, Pandan or coconut leaf.</p>



<p>The result is a spicy and fragrant fish cake with a firm mouthfeel similar to eating a Japanese Chikuwa or Satsuma-age!</p>

<p>二番目は、Otak-Otak（オタオタ）です！オタオタとは、マレー語で「脳」という意味です。見た目は「脳みそ」みたいですが、本当は脳の料理というわけではありませんよ。オタオタとは、魚のすり身を唐辛子や香辛料で味付けし、よくバナナかパンダンかココナッツの葉で包んで、炭火で焼いた一品です！食べてみると、ピリ辛の「薩摩ま揚げ」のような食感でビールによく合います～　☆</p>

<p>By the way, red wine complements Nyonya food very well!</p>



<p>Personally, I enjoy young red wines like Zinfandels and blends with milder spicy and aromatic foods – when chilled it is especially soothing to the palate! Although it is often said to avoid tannic wines like cabernet blends, I find that the stronger tannins complement well with the natural bitterness present in Nyonya foods. 😀</p>

<p>This year, as part of the celebration for Singapore’s 53<sup>rd</sup>&nbsp;National Day, the Overseas Singaporean Unit in the Prime Minister’s Office and the Singaporean Associations in Japan collaborated to produce a short video! The theme was to feature Singaporeans living and working abroad in Japan, and I was honored to be one of the five profiled.</p>



<p>We even filmed at my office! It was so much fun and I am grateful that my colleagues were very supportive and even joined in the filming efforts.</p>

<p>今年、５３年周のシンガポールナショナルデーのお祝いの一環として、シンガポール政府の文化省が日本のシンガポール協会と協力してメディア媒体を作成しました。テーマは、シンガポール国民の海外（日本）における就業活動の現況及び、滞在国における文化交流の現況に関するビデオです。私は撮影に出演させていただいたことを光栄に思います。</p>



<p>先日、弊社のオフィスに撮影クルーが来て、撮影をしました～Whizの皆さんも映っています！とても楽しかったです。皆さんのサポートと協力に感謝しています。</p>

<p>Every Singapore National Day, all Singaporeans will hold their right hand in a fist over their heart and recite the&nbsp;<a rel="noreferrer noopener external" class="rank-math-link" href="https://en.wikipedia.org/wiki/Singapore_National_Pledge" target="_blank" data-wpel-link="external">Singapore National Pledge&nbsp;</a>in unison. <p>シンガポール人はNDPの日、必ず全員が右腕を心の上に握って、起立してシンガポールの誓いを宣誓します。上記の写真のようですね。</p>



<p>Moving forward, I hope that my various activities will contribute to Japan-Singapore relations and encourage more diversity, mutual understanding, and collaboration.</p>



<p>今後は多様化、相互理解、協調を促すために、私の様々な活動が日本・シンガポール関に貢献することを願っています。これからも頑張ります！</p>

<p>Recently, I was the emcee for a Spring Festival Luncheon Celebration held at the&nbsp;<a href="https://www.mfa.gov.sg/tokyo/" target="_blank" rel="noreferrer noopener external" data-wpel-link="external">Embassy of Singapore in Tokyo</a>. The event brought together the Singaporean community living in Japan, and also helped promote Japan-Singapore cultural exchange and interaction.&nbsp;Diplomatic relations between Singapore and Japan were formally established on 26 April 1966. In 1973, the Singapore Government purchased a plot of land in the Roppongi district, Minato ward where many foreign embassies are located. The Embassy complex (consisting of the main chancery, the Ambassador’s residence and several staff apartments) was designed by renowned Japanese architect Shinichi Okada, who also designed Japan’s award-winning Supreme Court located in Chiyoda ward.</p>

<p>The event also featured an exhibition for Ciel Liu’s work as a Singaporean&nbsp;Artist, Freelance Producer, Photographer and Documentary Filmmaker. At present, she is strongly focused on video projects aimed at raising awareness internationally of Japanese traditional culture and crafts. She is also self-funding and working on an ongoing project documenting Outsider artists in Cuba.</p>

<p>Ciel Liu /&nbsp;シエル・リューさん（www.cielimpression.com）のアーティスト展は大使館で行いました。Cielはシンガポール人のドキュメンタリー作家、テレビプロデューサー、写真家です。現在は日本の伝統文化・伝統工芸を世界に伝える映像プロジェクトに意欲的に取り組んでいるそうです。また、キューバのアウトサイダー・アーティストのドキュメンタリープロジェクトなども制作中らしいです。</p>

<p>We enjoyed a buffet spread of local Singaporean food including&nbsp;two styles of Chicken (roast and Hainan) for Chicken Rice, Kueh Pie Tee, Carrot Cake, Laksa, and Bubur Chacha! Yum! Located in Omotesando, Tokyo, Rakudo uses the superior ingredients available in Japan to bring authentic Singapore food to the people in Japan.</p>

Made up of white and green radish, carrots, capsicum, turnips, red pickled ginger, slices of raw fish (commonly salmon), crackers, topped with the fragrant dressing of plum sauce, five-spice powder, sesame oil, this dish is usually served as an appetiser.<br>“Lo Hei” in Cantonese, where&nbsp;捞&nbsp;“lo” (literally mixing) means “tossing up good fortune”, refers to the ritual adopted in Singapore of tossing the y<em>u sheng</em>&nbsp;and saying of auspicious phrases before eating it. It is popularly believed that the higher the toss, the better your prospects and fortune in the year ahead.&nbsp;Before the tossing begins, the dish needs to be prepared, usually by one individual who adds the ingredients one by one in a specific order, while the reciting wishes of luck and prosperity evoked by the names of the ingredients used. With the plate placed in the middle, diners stand around the table to toss the ingredients whilst exchanging blessings and words of prosperity.<br><br><br>シンガポール独自の旧正月料理で、魚は中国語でyu（イュー）同じ発音の「余」は中国語で「余りが有る、豊かになる」ことを意味し、「生」はsheng（シェン）と発音し、同じ発音の「生」は「升(sheng)」とかけていて、「升」には上昇していくという意味があり、縁起の良い食べ物です。食べる時に、みんなで立ちあがって、捞起「ローヘイ」と言いながら、長箸を使って混ぜます。高くてすくい上げた方が願いが叶うと言われており、すくい上げながら願い事を言います。</td></tr></tbody></table></figure>

<p>With Rakudo’s&nbsp;Chef KT Yeo, award-winning Singapore chef and one of the pioneers of private fine dining in Singapore. As a child, Chef KT honed his cooking skills by helping his parents cook in their humble Singapore street-food stall. Later he trained at the prestigious Le Cordon Bleu and has also been inducted into Le Cordon Bleu’s Hall of Fame for his achievements as a chef. Chef KT has also authored award-winning cookbooks and regularly appears on TV, both in Singapore and internationally.</p>

<p><em>Japan is one of the few Asian countries that does not celebrate the Lunar New Year (FYI, in South Korea, it is known as “Seollal,” or “Eumnyeok Seollal”&nbsp;</em><em>음력</em><em>설날</em><em>), so it was nice to have a celebration with the overseas Singapore community here. <p>先日、<a href="https://www.mfa.gov.sg/content/mfa/overseasmission/tokyo/jp.html" target="_blank" aria-label=" (opens in a new tab)" rel="noreferrer noopener external" class="rank-math-link" data-wpel-link="external">シンガポール大使館</a>が日本に住むシンガポールのコミュニティのための新年会イベントをホテルニューオータニで開催しました。何百人も出席しましたので、にぎやかなイベントでした。</p>

<p>シンガポール大使館は色んなシンガポール料理を提供しました。例えば、Beef　Rendang(牛肉ルンダン：ココナッツミルクと香辛料で長時間煮込んだインドネシア肉料理である)やRoti　Prata（<em><strong>ロティ</strong></em><strong>・</strong><em><strong>プラタ：</strong></em>薄い生地が層になっているのが特徴のインド風パンケーキ）やBak Kut Teh（<em><strong>バクテー：</strong></em>マレーシア及びシンガポールの鍋料理である）など…　たくさんいただきました！皆様、シンガポール料理はお好きですか？</p>
